Aldol cleavage would cut fructose into two three carbon sugar molecules. That sounds like a good idea but the problem is that although one of the products would be phosphorylated, the other would not be. It is a good idea to make sure that all intermediates carry a charge; so before you cut the molecule in half you have to make both ends charged.
